Recipe for:

Green Goddess Salad Dressing

This classic recipe for Green Goddess salad dressing includes mayonnaise, anchovies, vinegar, green onion, garlic, parsley, tarragon and chives. 
It can be prepared in a blender or food processor and is good served as a dressing for salad greens, steamed artichokes, seafood salads, or as a sauce over broiled or baked fish. ( If you don't have fresh tarragon, you can use 1/4 - 1/2 teaspoon dried, instead. ) 

Recipe yields: 6-8 servings. 
INGREDIENTS:
2 cups mayonnaise ( I prefer Kraft Real mayonnaise )
4 anchovy fillets, minced or equivalent measure of Anchovy Paste
1 green onion, chopped 
2 teaspoons chopped fresh parsley 
2 teaspoons chopped fresh chives 
1 tablespoon tarragon vinegar 
1 teaspoon chopped fresh tarragon 
DIRECTIONS:
Mix together mayonnaise, anchovy, green onion, parsley, chives, vinegar and tarragon. 
Refrigerate until ready to serve and pour over favorite salad greens, vegetables, or seafood dish.
